The Secret
When planning an Argentine dinner, the steak is the center of it all. So it is important to make sure it comes out perfect. Since skirt steak is a thinner cut, it is better to cook it while still cold, allowing the crust to crisp without overcooking the center. Also, remember to let the meat rest for at least 15 minutes before slicing it thinly, across the grain on the bias. Resting will keep all the juices in and prevent the meat from drying.
