The Dish
Argentina is the land of steaks, so chose your favorite cut and serve it with Chimichurri, a savory garlic sauce that Argentines love to use as both a marinade and sauce. To keep the menu even more authentic, go with skirt steak, an Argentinean favorite. Serve it with white rice and a simple salad.

The Secret
When planning an Argentine dinner, the steak is the center of it all. So it is important to make sure it comes out perfect. Since skirt steak is a thinner cut, it is better to cook it while still cold, allowing the crust to crisp without overcooking the center. Also, remember to let the meat rest for at least 15 minutes before slicing it thinly, across the grain on the bias. Resting will keep all the juices in and prevent the meat from drying.

The number of guests depends on the size of your dinner table. We find, however, that we can always squeeze in one more or two more by keeping a few folding chairs at hand.
